About
A natural delicacy: a caterpillar native to the tea forest eats pu'erh leaves and excretes tiny, perfectly smooth pellets. The resulting brew is unexpectedly clean and easy, likely because the leaves have been pre-metabolised.
Brewing guide
1–2g per person — a flat teaspoon
Do not rinse — it is too precious. Give the first infusion a minute and drink it.
The second brew is the best of the session. Keep brews under 80 seconds until the third.
If it tastes bitter, it steeped too long — keep it short and it stays clean.
Best in the smallest teapot you have, poured into small cups — preheat the cups with hot water so the tea doesn't cool too fast.
